I just recapped my fall activities, but I wanted to revisit my “goals” list, too.
And share my winter goals!

Eff that damn ice cream maker. UGH. Other than that, I think I crossed lots of good ones off this fall! I also finally learned how to cook fish and bake yummy chocolate chip cookies!
Alright, on to my Winter Goals:
I’m sticking with five goals each season this year, plus some “fun stuff” (a.k.a. bucket list items) that I will occasionally share about.
- Finish Year 4 Scrapbook
- Read at least three books per month (January, February, March)
- Visit yoga studio at least one a week (I bought a class package)
- Meal plan every week
- Finish Xmas shopping & enjoy the parties and off time we have coming!
Additionally, I’m still working on my Overhaul Goals. I failed in September, did ok in October, was moderately successful in November, and have been doing well this month.
What’s on your winter to-do list? What are some fun things you like to do or see when it’s cold out?

What’s keeping you from doing the ice cream? Too many recipes to choose from? No time? I can give you a recipe I’ve made and loved if you want.

It’s a mixture of forgetting that I have the ice cream machine, not making the time to do it, and not taking the time to hunt for recipes. I’ll gladly take some recipe suggestions!
The chicken recipe is amazingly easy.
Boneless/skinless chicken breasts. Pat them dry. Coat them in an Italian panko mix. (No egg or anything on them- just pat them dry and get the coating on them.) In a pan heat up some olive oil and a few tablespoons of butter (maybe 2ish). Let that melt and get hot. Then toss the chicken in. You can season with salt and pep if you wanna. 3 to 6 minutes per side, depending on how thick the breasts are (sometimes we do thin cutlets and those only take a few minutes per side). And that’s it. They crisp up and are SO yummy.

You did so awesome against your goals, Audrey. Really, really proud of you, girl! Also, please share how you’re cooking chicken, which is so hard to cook well. Or at least I struggle with making sure it’s fully cooked but not bland or so dry that you choke trying to eat it. 😀

I am so close to selling it… but I’m afraid I’m missing out! Ha. It took us 1.5 years to finally use the popcorn machine and now I LOVE it. I just need to do ice cream once and see if it’s worth it 😉

Sad to see the ice cream make has bit the dust, but it’s probably fr the best. That’s been a recurring goal. 🙂 Your costumes look awesome – great job! I’m with you on meal planning. I’ve added that to my goals for the next 3 months as well.

Apparently we’re content with store-bought ice cream. Whether or not I really get rid of the ice cream maker is still tbd. LOL
I was getting pretty good at meal planning in our old house, then we moved. That was over a year ago. Haha.

Yes! You got SO much done, how awesome! I worked on Bella’s baby book for the first year last month..I was only complete through month 5 and printed off a ton of pictures to update it. I want to work on our Disney Cruise scrapbook since we went on that about 4 years ago and I have NOTHING done haha. Winter is a great time to knock some things off the list!

I can’t believe how smoothly everything went this fall goal-wise. That rarely happens. Great job with Bella’s baby book! It’s funny how the funny stuff and hobbies become “chores” because we don’t take the time to do them. Scrapbooking seems like a task because I never get around to it, even though I love doing it!

Great job on all of your Fall goals. I still need to use my ice cream maker, though hopefully it will actually happen this summer. I have my nieces and nephew around these days so that might be a good incentive to bust it out. LOL I’m hoping to get back into my writing. I think Winter would be a good time for that. I need a better balance with blogging and fiction writing.
